Energy bar, an easy every-day snack

Energy bars are the perfect every-day snack. Easy to make and easy to carry with you everywhere you go. They are made with just few ingredients to ensure this snack is packed with the right balance of proteins, fibres and carbs.

Energy bars are simply the cousin of energy balls, same ingredients, different shapes and honestly much easier to make. In fact, you don’t have to get your hands all sticky to enjoy this delicious and nutritious snack.

Ingredients

For 6 bars, prep time 20 minutes

  • 250g dates
  • 25g chia seeds
  • 70g peanut butter
  • 100g oats
  • 1 tsp pumpkin seeds
  • 1 tsp sunflower seeds
  • 1 tsp sesame seeds

Method

1 – Soak the dates in hot water for about 10 minutes. Mill the chia seeds using a blender, then add the soaked and drained dates.

2 – Add the peanut butter and blitz it all to obtain a paste. Transfer the mixture in a bowl and add oats.

3 – Mix all the ingredients well to obtain a mixture that holds itself to a shape. If it still too soft, add a little bit more oats. Shape the mixture into a nice long rectangle. Using a pestle and mortar roughly mill the other seeds: pumpkin, sunflower and sesame seeds.

4 – Sprinkle the milled seed mix over the mixture made of oats and dates and pat it down to get the seeds to stick to the top. Wrap it tightly in cling film and secure it into a shape. Then gently unwrap it and cut it into squares. Take the energy bars with you everywhere you go for a filling snack packed with fibres and proteins.

Tips

  • Keep the squares in the fridge in an airtight container to preserve their tasty quality for as long as a 10 days.
  • Make these energy bars in any shape you like and then simply cut it to your favourite size, perfect for your needs and hunger.
