French Toast recipe for a sweet brunch

French toast are an excellent tasty alternative for breakfast or for a sweet brunch. They can be prepared with different types of bread, and in this recipe, it is proposed in one of its best versions, using a gluten-free brioche bread.

As you will see in the list of ingredients, the bread should be kept in the fridge for at least 24 hours to have the perfect consistency to absorb the light batter of eggs and milk and maintain a perfect shape during cooking.

French toasts can also be served with savoury ingredients such as ham and cheese, accompanied by fig jam.

Ingredients
For 4 toasts, preparation time 5 minutes, cooking time 15-20 minutes; Brioche-type bread, gluten-free, kept in the fridge at least 24 hours.

  • Marmalade
  • 1 egg
  • 200ml milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 50g butter

Method

1 – Slice the brioche bread at least 2cm thick and with a serrated knife, score the top in the centre to create a pocket. Fill the pocket with a teaspoon or two of jam, being careful not to break the sides of the bread.

2 – Break the eggs into a bowl, add cinnamon and vanilla and whisk together. Then pour in the milk.

3 – Dip the stuffed bread slices in the batter, allowing the bread to absorb the liquid.

4 – In a hot pan, melt a knob of butter and cook the toast on all sides. Cook as many as fit in the pan on medium-low heat. Serve with yoghurt, fresh fruit and maple syrup.

Tips

– The secret to great French toast lies in how much you will be able to let batter be absorbed by the toast. The more they are soaked, the better.

– After toasting all sides of the toast, you could continue cooking and keep them warm in the oven until it is time to serve them at the table.
