Cauliflower hummus with quick pan-fried bread

A variation of the traditional chickpea hummus, cauliflower hummus is prepared in no time, also allowing you to cook soft bread in a pan while the cauliflower is roasting in the oven.

The main flavours and ingredients are the same of chickpea hummus: tahini paste, garlic and lemon. To add a Middle Eastern touch, the recipe lists cumin seeds and paprika too.

Pan-fried bread is prepared quickly and depending on the amount of water you choose to use, the consistency will change; leaving the batter liquid, you will get soft flat bread. While with less water, you will have bread similar to Venezuelan arepas, in both cases, the result will always be excellent.

Ingredients

About 350gr of hummus and pan-fried pitta bread, preparation time 25 minutes, cooking time 30 minutes:

  • 1 head of cauliflower (about 500gr)
  • Cumin seeds
  • Salt and pepper
  • Extra virgin olive oil
  • 1 clove of garlic
  • 1 tbs of tahini sauce
  • 1 lemon, the juice
  • For quick pan-fried bread
  • 50gr gluten-free flour for desserts
  • 50gr gluten-free bread flour
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 1 tsp of oil
  • 1 tsp of vinegar
  • 150ml Water – just enough

Method

1 – For the hummus, wash and cut the cauliflower into pieces, arrange it on a baking tray with the garlic and season with salt, pepper, cumin seeds, and oil. Bake everything in the oven for 20 minutes, and once cooked, put it in the blender.

2 – Add the tahini sauce, juice of one lemon, a tablespoon of oil and half a glass of water. Blend until you get a mixture of the desired consistency. Finally, adjust the seasoning with salt and pepper.

3 – While cooking the cauliflower, you can prepare the pita bread in the pan. In a bowl, combine the flour with the baking powder and the salt. Then add water and oil and mix until the batter looks smooth – the amount of water may vary. Finally, add the vinegar

4 – Heat a pan and grease it with a bit of oil. Pour the mixture and let it cook on both sides. Serve the bread while still hot with the cauliflower hummus garnished with fresh parsley and paprika.

Tips

– Cauliflower is a versatile vegetable, but, above all, quick to cook, the cooking time will depend a lot on the size of the cauliflower pieces.

– To cook bread in a pan, make sure the pan is really hot before greasing it with the oil.
