As we’ve seen in our article on gluten-free flour, using a mix of gluten-free flours is key to achieving the same results as wheat flour. For this recipe, we used a combination of corn and rice flour in our gluten-free plain flour, along with oats for added nuttiness.

Ingredients

For 1 tray 20x20cm, prep time 15 minutes, cooking time 35-40 minutes

  • 200g gluten-free plain flour
  • 60g rolled oats
  • 30g oat flour
  • 30g almond flour
  • 75g sugar
  • 75g butter
  • ½ tsp bicarbonate of soda
  • 1 tsp ground ginger
  • 2 ½ tsp ground cinnamon
  • ½ tsp ground cloves
  • 1 tsp salt
  • 2 apples
  • 1 lemon, juice and zest

Method

1 – Mix gluten-free plain flour, rolled oats, oat flour, sugar, bicarbonate of soda, ginger, cinnamon, salt, and lemon zest in a large bowl.

2 – Add the cubed butter and start working it with your fingertips to incorporate the flour into it until you make it crumble. Add half of the mix to a baking tray lined with parchment paper.

3 – Begin by gently pressing the crumble mix down to create a flat pastry layer. Next, place the sliced apples (previously misted with lemon juice) on top of the pastry and sprinkle with almond flour.

Cover the apples with the remaining crumble mix, being careful to maintain its texture. Bake in the oven at 180°C for 25 minutes, followed by 25 minutes at 200°C until golden. Allow the apple crumble slice to cool before slicing and serving with warm toffee sauce.

Tips

  • Lemon juice is great at keeping the apple from turning brown.
  • The almond flour on the apple will help absorb some of the juice so that the apple crumble slice will stay nice and crunchy.
